Whether you’re a propane pro or a charcoal traditionalist, a few quick steps can ensure both safety and delicious results this long weekend.


Propane BBQ: Safety First Before You Spark

Before you light up your propane grill, take these steps to ensure it’s in working order:

  1. Inspect the Hose and Regulator
    Check for cracks, damage, or leaks in the hose. One popular test: mix a bit of dish soap with water and apply it to the hose using a spray bottle. Turn on the gas (without lighting the grill). If you see bubbles forming, you’ve got a leak — don’t use it until it’s repaired or replaced.

  2. Check Connections
    Make sure all connections to the propane tank and burners are tight and secure. Hand-tighten the tank connection and ensure the tank itself is in good condition.

  3. Clean the Burners and Grates
    Use a grill brush to remove old grease and debris from the burners and cooking grates. Clogged burners can cause uneven heating and flare-ups.

  4. Test Ignition System
    Ensure your grill ignites properly. If you’re using a match, always keep the lid open to avoid a dangerous buildup of gas.

  5. Ventilation Matters
    Always grill in a well-ventilated area — never indoors or in an enclosed garage.


Charcoal BBQ: A Post-Winter Checklist

  1. Clean Out Old Ash and Debris
    Remove leftover ash and any rust from the bowl and ash catcher. Use a metal scraper or wire brush.

BBQ Recipes to Kick Off Grilling Season

Perfect BBQ Chicken Thighs (Propane or Charcoal)

Ingredients:

  • 8 bone-in, skin-on chicken thighs

  • 1/4 cup olive oil

  • 2 tbsp paprika

  • 1 tbsp garlic powder

  • 1 tsp cayenne pepper

  • Salt and pepper to taste

  • 1/2 cup of your favourite BBQ sauce

Instructions:

  1. Rub chicken with oil and seasonings. Let marinate for 1 hour.

  2. Preheat grill to medium heat (around 375°F).

  3. Grill thighs skin-side down for 5–6 minutes, flip, then cook for another 10–12 minutes or until internal temperature hits 165°F.

  4. Brush with BBQ sauce in the last few minutes and char slightly for smoky flavour.


Smoky Charcoal BBQ Ribs

Ingredients:

  • 2 racks pork back ribs

  • 1/3 cup brown sugar

  • 2 tbsp chili powder

  • 1 tbsp ground cumin

  • 1 tbsp garlic powder

  • Salt and pepper

  • Apple cider vinegar spray

  • 1 cup BBQ sauce

Instructions:

  1. Remove membrane from ribs, apply dry rub, and refrigerate overnight.

  2. Set up a two-zone fire in your charcoal grill (coals on one side).

  3. Place ribs bone-side down on the cool side. Cover and smoke at 250–275°F for about 3 hours.

  4. Spritz with vinegar every 30 minutes.

  5. Finish by brushing with BBQ sauce and searing directly over coals for a caramelized finish.
