Apple Oatmeal Cookie - Foodland Ontario

THUNDER BAY – LIVING – It’s cold outside. Winter weather means skating, sliding, snowmobiling, ice fishing and other winter activities. Winter also means it is time for fast and tasty snacks.

Foodland Ontario has a tasty treat that will go perfectly with a hot cup of hot chocolate.

Serve this cookie with vanilla ice cream and a drizzle of Ontario maple syrup. Use Ontario apples such as Cortland, Ida Red or Red Prince.

Serves 8

1/2 cup (125 mL) unsalted butter, at room temperature
1/2 cup (125 mL) packed golden brown sugar
1/4 cup (50 mL) granulated sugar
1 Ontario Egg
1 tsp (5 mL) vanilla
1-1/2 cup (375 mL) quick-cooking rolled oats
3/4 cup (175 mL) all-purpose flour
1/2 tsp (2 mL) baking soda
1/4 tsp (1 mL) salt
1 cup (250 mL) diced Ontario Apple (about 1)

In a large bowl, using an electric mixer, on medium speed, beat butter, brown sugar and granulated sugar until creamy. Add egg and vanilla; continue to beat until well combined.

In a medium bowl, whisk together oats, flour, baking soda and salt. Using a spatula, stir flour mixture into egg mixture, until blended. Fold in apples. Press dough into the bottom of 10-inch (25 cm) well-greased cast iron skillet.

Bake in 350°F (180°C) oven until cookie is golden brown and set in the centre, 15 to 20 minutes. Let cool for 10 minutes; cut into 8 wedges.
