  • 1 zucchini, cut into 1-inch rounds
  • 1 yellow squash, cut into 1-inch rounds
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions:

  1. If you’re using wooden skewers, soak them in water for at least 20 minutes before grilling to prevent them from burning.
  2. Thread the veggies onto the skewers.
  3. Brush the vegetables with olive oil and season with salt and pepper.
